Cowboy Cookies

The recipe is so good!!!  I still haven't figured out why they call them cowboy cookies though...  We got this recipe from a Martha Stewart magazine.  Enjoy!!

Cowboy Cookies

cooking spray
2 c. all-purpose flour
1 tsp. baking soda
1 tsp salt
1/2 tsp. salt
1/2 tsp baking powder
8 oz. (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 c. light-brown sugar
2 large eggs
1 tsp. pure vanilla extract
1 1/2 c. old-fashioned oats
6 oz. semisweet chocolate, cut into 1/4-inch chunks (1 c.)  (I just used semisweet chocolate chips.)
3 oz. (3/4 cup) pecan halves
1/2 c. shredded unsweetened coconut  (we've never had unsweetened so we use just sweetened.)

1.  Preheat oven to 350 degrees F.  Coat large baking sheet with cooking spray, line with parchment, and spray parchment.  (I just sprayed the baking sheet with cooking spray then wiped the excess oil off with a paper towel.  It worked perfect!)  Sift flour, baking soda, salt, and baking powder into a medium bowl.

2.  Beat butter and sugars with a mixer on medium-high until pale and creamy, about 3 minutes.

 Reduce speed to medium.  Add eggs, 1 at a time, beating well after each addition.  Beat in vanilla.

3.  Reduce speed to low, and slowly add flour mixture, beating until just incorporated.

 Beat in oats, chocolate, pecans, and coconut until combined (Dough can be refrigerated for up to 3 days.)




(After mixing it almost overflowed because I made a double batch!)

4.  Using a 1 1/2-inch ice cream scoop or a small spoon, drop dough onto baking sheet, spacing 3 inches apart.



5.  Bake until edges of cookies begin to brown, 11 to 13 minutes.  (It only took my cookies about 9 minutes.)  Transfer baking sheet to wire rack, and let cool for 5 minutes.  Transfer cookies to racks.  Let cool.  (Cookies can be stored up to 3 days.)

Crochet Bullseye

I think this would be so cute to make!  The directions look like a different language to me though.  I know how to crochet (a little) but not enough to know what in the world these directions are saying.  Maybe my mom will translate. Isn't little bullseye adorable though??? :)

Rustic Apple Galette/Pie

This galette/pie is amazing!  Enjoy! :)


Apple Galette/Pie

1 glob of pie dough or enough dough for a double crusted 9" pie
7 cup tart apples
1/2 cup granulated sugar
1/2 cup brown sugar
3 1/2 Tbsp all-purpose flour
1 tsp cinnamon
1 Tbsp cream
2 tsp butter
milk (you're going to thinly coat the top of the crust with it)
1 Tbsp granulated sugar

Turn your oven on 400 degrees F.
Roll the pie dough to about a 17" circle.  Lay in a 9" pie pan with the edges hanging down.  Slice the apples. Mix the apples with the granulated sugar, brown sugar, flour, cinnamon, and cream.  Pour in to the pie pan then pull the extra pie crust overtop the apple mixture.  Divide the 2 tsp of butter into little pieces and put them on the apples.  Spread the milk with a brush all over the dough.  Sprinkle the sugar over the crust.


  Put the pie in a oven for 45 to 55 minutes.

Pretzel Bites

These were seriously some of the best pretzels ever!  They tasted just like the pretzels at the mall.  My family and I both thought that they were amazing.  My brother ate most of them.  The pretzels are so addicting!!!  You could start by eating one.... than another, then a couple more... oops, they're gone!  Enjoy!

  • 1 1/8 cups water (70 to 80 degrees F)
  • 3 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 1 1/2 teaspoons active dry yeast
  • 2 quarts water
  • 1/2 cup baking soda
  • coarse salt
  • melted butter – not in the original recipe, but a must for mall food pretzel like experience
  1. In bread machine pan, place the first four ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed).
  2. When cycle is completed, turn dough onto a lightly floured surface. Divide dough into eight balls. Roll each into a 20-in. rope; form into pretzel shape. (I tried forming the dough into pretzels, but when I put it in the bowling water it lost its shape and looked awful, so I just cut the 20 in. ropes into small pieces and it worked perfect!) In a saucepan, bring water and baking soda to a boil. Drop pretzel bites into boiling water, two at a time; boil for 10-15 seconds. Remove with a slotted spoon; drain on paper towels.
  3. Place pretzels on greased baking sheets. Bake at 425 degrees F for 8-10 minutes or until golden brown. Brush with melted butter. Sprinkle with salt.

Rain...

Yesterday and today has been cold, windy, and rainy.  It makes me just want to curl up next to a fire, drink hot chocolate, and watch a movie.

If you have to go somewhere in this awful weather you should have at least the right apparel, right?  You need this adorable coat (Don't look at the price.)
