On the trampoline

In action...





This picture above is me... I don't know what I was doing.




So yesterday we put our trampoline up for the summer.  It was the perfect day to do it, the sky was clear, there was a nice breeze, and it was in the 70's.  Even Lucy wanted to get on... (we kind of forced her, but once she was on she liked it.) :)

Over the weekend. Road trip!

Last Saturday we took a trip to Michigan to see my brother (who goes to college up there) and my sister (who works at the college).  It was a really short trip that was spent eating, watching basketball games (blah), and listening to wedding talk between my sister, mom, and "future" sister in law.  Here are some pictures of our road trip.  Six people in a six passenger truck was a little tight...

For breakfast we had pop tarts.  Not the best untoasted, but still good.

The perfect spring dress
















One of my favorite things about spring is... dresses.  My birthday is coming up (in 2 months!) and I've been looking on the internet to find the "perfect one" to ask for.  Ruche, has some of my favorites.  This is going to be so hard to decide because there are so many cute ones out there!

Ice Cream Cake

I made this cake for my brother's birthday and everybody thought it was wonderful.  My grandma thought that it was better than a bakery one she had had the day before. The cool whip icing made it for me. :)

Ice cream cake

2 qt ice cream (We did 1 qt. chocolate and 1 qt. vanilla.)
2 to 3 c. crushed oreo cookies
caramel sauce
hot fudge sauce
1 8 oz. container of Cool whip

Soften 1 qt. ice cream for 15 minutes.  In the meantime get out a spring form pan and crush the oreos.  When the ice cream is spreadable, spoon all of it in the pan and spread it as evenly as possible with a spatula.  I find it easier to use a big spatula than a little one because it is less flexible.


 Now, one thing that you have to remember is that you have to work fast.  After you have spread the first layer of ice cream in the pan, put it in the freezer for at least 30 minutes.  Take it out and spread the crushed oreos over top,


then drizzle the caramel and hot fudge sauce evenly over the oreos.  Put it in the freezer for another 30 minutes.  Soften the other qt. of ice cream out.  Take the cake out of the freezer and spread the other ice cream on top.  Put it in the freezer for another 30 minutes.  Take it out and ice it with the cool whip.  Put it back in the freezer until frozen again.  Remove and decorate.
