The Perfect Meal, Part lll

For desert I made pumpkin pie!  Before, I have never really been a pumpkin pie fan but this was amazing!  I got this recipe from an old County Fair Cookbook.  You have probably figured out by now that all of our cookbooks are old.  Enjoy!

Pumpkin Pie:

Makes 1 pie

1 1/2 c canned or cooked pumpkin
1 c brown sugar, firmly packed
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
3 eggs, beaten
1 c. evaporated milk
1 unbaked 9" pie shell

Directions:

Combine pumpkin, brown sugar, cinnamon, nutmeg, and allspice in a mixer bowl.

 Add eggs; mix well.  Gradually add evaporated milk; blend thoroughly.  Pour into pie shell.


 Bake in 425 degree F oven for 15 minutes.  Reduce heat to 350 degrees F and bake 35 to 45 minutes or until knife inserted in center comes out clean.  Cool on rack. makes 6 to 8 servings.
